What this kit does
Walleye and perch are the best-eating fish in fresh water, and most of what ruins them happens in the four hours between the net and the kitchen. Fish held warm go soft. Fish frozen in a bag of air go freezer-burned. Neither problem is a cooking problem.
This kit is the chain from boat to freezer.
The YETI Tundra 65 is a rotomolded cooler and the reason it is here is ice retention, not the badge. A hard-sided insulated cooler holds ice through a full July day on a boat deck in the sun, and a limit of walleye buried in ice — not resting on top of it, buried — goes into the fillet table at near freezing. Sixty- five quarts holds a limit for two anglers plus enough ice to actually work. If you already own a good cooler, keep it; this is the substitutable item.
The Magma cutting and bait board mounts to a gunwale or a rail and gives you a flat, cleanable, non-slip surface at the right height. Cleaning fish on a tailgate or a picnic table is how people cut themselves. A board that clamps down does not move when the knife does.
The Bubba Li-Ion cordless fillet knife is the labor-saving item and it earns its place on a perch day. Filleting forty perch by hand is forty minutes of tedium; with a powered knife it is fifteen and the fillets are cleaner. On walleye it takes the effort out of the rib cage and the skinning pass.
The Ketch measuring board is in the kit for a specific reason: it is how you verify a fish is legal before it goes in the cooler, and it is how you document it if the fish is a photo fish being released. Measure at the boat, not at the ramp.
The Engel 13-quart live bait cooler does double duty: minnows alive on the way out, fillets cold on the way home.
The FoodSaver vacuum sealer is the last link and the one people skip. Fish frozen in a zip bag with air in it develops freezer burn in weeks. Vacuum-sealed walleye fillets are genuinely good six months later. If you catch fish worth driving for, seal them.
What it deliberately leaves out
No fillet knife by hand. You want one — a flexible six- or seven-inch blade for finish work and for the days you clean three fish and cannot be bothered to charge anything. It is cheap and it is a personal-fit item.
No brine, no salt, no smoker. Smoking whitefish, lake trout and salmon deserves its own kit rather than a line item here.
No glove. A cut-resistant glove on the non-knife hand is smart and costs almost nothing. Add one.
The part that is actually the rules
Bag limits, size limits and possession limits differ by state, by lake, by basin and sometimes by specific bay, and they are revised annually. Transporting fish across a state line adds its own rules about how fillets must be presented — several states require a patch of skin left on for identification. Read the current guide from the state agency for the water you fished and for any state you drive through with fish in the cooler.
Consumption advisories are separate from limits and also matter. State health departments publish species- and lake-specific guidance on how often to eat Great Lakes fish, particularly for children and people who are pregnant. Look it up once for the water you fish most; it is a short read.
